Mom's coming over for a Mother's day lunch Sunday. She is requesting a high protien, low carb meal. I have no idea what to make.

How about a grilled chicken breast w/ side salad (be careful w/ dressings), and something like sugar-free Jello for dessert?

you could also make some mini quiches (sort of) using egg beaters (SW version) and spinach and cheese. yummy.

If she likes seafood, a grilled fish with salsa choice might do. (Something exotic, or a nice traditional salmon or sole, depending on her taste.)
You can serve that with a nice salad, maybe with some chunks of low-fat cheese or some nuts thrown in.
Maybe add some of the "cauliflower that looks like mashed potato" on the side if she likes cauliflower.

If you're not worried about cholesterol, devilled eggs also seem to fit the bill. You can find low-carb mayo; normal mustard should be fine. That was one of the things my brother and SIL requested when they were in the South Beach induction phase.
a nice fish is a great idea. whatever fish you choose, i suggest a crushed pecan coating. not sure if winter veges are still available, but acorn squash goes well with fish.
