Default Carrot Cake

Anybody have a fabulous recipe for carrot cake that they want to share? I have never made it before but am planning to do so this weekend. I actually only at it for the first time in my life a couple of weeks ago - I'd always assumed I wouldn't like it, but it turns out that I do. I'm not really sure what typically goes into a carrot cake, but I envision mine full of yummy things (i.e. raisins, etc.) but NO nuts (no allergies, I just hate them) and topped with cream cheese frosting.

I'm not hurting for ideas, obviously there are a million recipes on the internets; just thought I'd ask here and see if anyone has something particularly compelling to suggest.

The best carrot cake ever. Never fails

2c flour
1t salt
1.5t baking soda
1t baking powder
2t cinnamon
2c sugar
4 eggs
1.5c cooking oil (i use safflower)
2c grated carrots
0.5c chopped walnuts
0.25c raisins
1 8oz can of crushed pineapple (not drained)
------
Topping:
8oz cream cheese
1 stick butter
1t vanilla
3/4 box confec. sugar

------------

Combine all dry ingredients for the cake, and stir. then add wet ingredients, and stir. Pour into a 13x8x2" pan. Bake @ 355 for 55 min. Cool for 30 min.

For topping:

Smush together cream cheese, vanilla and butter. Add sugar a little at a time, blending well. Spread over top of cooled cake. Add nuts on top if desired.

yes there will be cream cheese. But we don't have a guarntee that it will be tbug that eats you. It could be her hairy friend that doesn't brush his teeth.
