I remember some being scheduled on holidays. More to take people away from planned home-like activities like picnics and grilling in the backyard and parades.

This.

TBH, I don't notice a difference in the environment between open/closed roof at Chase Field. I love it either way. Now Spring training is another story - but the stadiums are smaller, so it feels more intimate. Having a day game in an open stadium is one of the best experiences to be had.

The time I went to a game it was 115 outside and 85 inside. Still plenty warm enough inside to be comfortable in shorts, sandals, and a t-shirt, but quite a bit less oppressive than 115. Definitely noticeable when we came into the air conditioning.
