No Country for Old Men is the first line from "Sailing to Byzantium." Sailing to Byzantium is about old age and the loss of vigor/meaning as you age particular in comparison to youth / the rest of the world.

The character Chigurh is a cold remorseless hitman. He represents death/ time/ the inevitable evil of a world that will eventually kill you without thought, without remorse, without feeling. You can remove his character from the movie and the plot rolls along without him. Moss takes the money, the Mexican gang end up killing him for it and Bell is always one step behind (the loss of vigor/meaning/purpose as he faces age/retirement).
