Yeah, that math would work.

Iíve stuck with 15%. Inflation has move the food prices up, so the 15% has gone up with it.

Yup.

$5 to me is not really a big deal, but to a server it's a very nice thing. I try to be generous to people doing things for me.

Same for me.

I also have a floor on tips per drink at a bar. My minimum there is $3 total, or $1/drink, whichever is greater.
