If I had to choose between just ketchup and mustard, I'm probably going with ketchup. Typically I go for both, plus onions, maybe some hot peppers, and pickles. Not relish, I want dill. And not dill relish, too mushy, I slice up some pickles.

Sometimes in summer I'll buy some roasted green chilies and mix them up with onion and tomato, a bit of jalapeno, and put that on a dog.

Hot dog < hot dog with ketchup < hot dog with mustard < hot dog with mustard + sauerkraut = Chicago dog (pickle, tomato, onion, relish, celery salt + sports peppers (peppers are optional)

mustard is the clear choice b/t the two, imo.

mustard/chili/onion is the hot dog trinity for me. although i've struggled to find a suitable replacement for texas pete chili since they discontinued it.
