Thanks, _BullDog_!
I posted mine in my thread. I'll go ahead and crosspost. One of the reasons I'm doing this particular chili is because at last year's cookoff, about 2/3 of the chili was beer-based. Not only that, but it was beer-based to the point of absurdity. Like, "Here, taste some warm beer. I accidentally put some cumin and beef in it, hope you don't mind!" So I thought I'd separate myself from the pack by using a lamb/wine recipe vs the beef/beer. My wife, who's at home letting it simmer right now, says the smoked paprika smells really good too. Can you mail me some? I could use some good chili right about now.

My chili always gets rave reviews, and it's pretty simple.
I use ground beef as the meat, nothing else My main thing is that instead of using regular tomato sauce, I use Hunt's Manwich sauce. Garlic kidney beans jalapenos cayenne pepper some hot sauce onion I think that's pretty much it. If it needs some liquid added, I'll put in some water so it doesn't burn.

I don't measure things out, I just pour it in, and use what looks right. I can't really say. I usually use about 2 lbs of meat, and 2 cans of beans (I use the canned ones when I don't have time to boil the beans for a few hours to get them really soft.) About 4-5 peppers, 1 big onion (Spanish, I guess) and the rest would be to taste, I guess.

Seeing my old post in the other thread reminded me of the one spice I forgot to mention here: chili powder. Kind of obvious...

Yeah, but chili powder is just a combo of cumin, cayenne powder and usually a few other things.
