A band saw is nice, but we just used a meat saw--it looks like a hacksaw but is about twice the size.

Roughly 30% of live weight is boneless meat; another 25% or so is bones. The rest is skin and internal organs.

If you can butcher a chicken, you can butcher a pig--it just takes longer.

And I make my own bacon--it isn't very hard if you have a refrigerator to cure it in.

I would like to learn how to butcher. Are there classes you can take?

I haven't helped much, but I've watched my dad and uncles cut up deer, elk and lamb before (I'm not sure you can really call what they do "butchering").

I have helped skin the animals prior to the cutting.

Just speaking for myself, butchering a cow would fall towards the very bottom of things I would like to spend my spare time doing.

Butchering (along with hunting, gardening, etc) is one of those things that I would rather know how to do and never need to than end up needing to do and not know how.

If you've watched other people do it, and you found that you needed to do it, and you had the right tools handy, I bet you could do an adequate job.
