I agree you can do some fun things with WB. Maybe it's unfortunate that most of the "art" in this is shifting from the camera to the computer.
I think once you get a feel of manipulating RAW, you will use it more.

To me, RAW is like an undeveloped negative and the RAW converting process is like developing the neg and print. In the film developing process, there are so many variables like chemical types, duration of wash, print paper type and etc. (I took a semester of b/w and 1 semester of color in school) and it was a Royal pain in the butt. And very time consuming too. Now with the digital conversation, not only the result is instant, you could redevelop the RAW again and again with different approaches. This frees up the artist from mundane process and focus on realizing his photographic vision.

besides, even when you don't shoot RAW, you camera still do. The camera just have a pre-determine algo to convert the RAW data into jpeg without saving the RAW file.

I am a lightroom guy. I found its work process efficient and its full feature adjustment very handy. it has free trials so give it a run.

I'd say it works too well. Maybe my settings are too aggressive.

This is a picture I took in the first week of owning my T2i. Not an amazing pic, but I was happy with it for being a newbie. This is my middle child playing in the sprinkler with a friend from the neighborhood.

And this was a picture taken just the second day. Again, nothing to blow your socks off. But it sure doesn't hurt that I have a cute kid!

Nice shots Egghead! Love the water pic and little girl is very photogenic. Try taking a shot where you get in REALLY close. Her whole head doesn't even have to fit in the frame.

And here's the picture of the oldest I mentioned earlier, using the trick with the CTO gel on the flash:
