DIY ePub

How do I? Let us say I have a collection of either single page PDF files or jpg files (from a scanner) and I want to make a very basic ePub ebook.

I know I can use a PDF tool to concatenate all the PDFs and then use Calibre to go from pdf to ePub.

And I could bring all the JPG images into word (or open office or whatever) and then convert that.

But is there something easier?

Assume the ultimate destination will be a color Nook (not rooted)
